1 Soak the wheat berries in 3 cups of water overnight. In the morning, drain the wheat berries in a fine mesh strainer. Rinse thoroughly with cold water and let drain for 5 minutes.
2 Add the wheat berries to a food processor. Pulse until the wheat has cracked, meaning the wheat berries are no longer in whole pieces but resemble rough steel cut oats. Add 1 cup of water and process for 30 seconds until the mixture is coarse and creamy.
3 In a medium saucepan, bring 5 cups of water to a boil. Add the salt and wheat berry mixture. Return to a boil, stirring constantly, then lower the heat to a simmer. Cover and cook for 12 minutes, stirring occasionally.
4 Turn off the heat and let stand, covered, for 10 minutes. Serve warm. The porridge may be stored in an airtight container in the refrigerator for up to 3 days and reheated with added water and milk, if needed.
